INGREDIENTS
6 medium-sized potatoes
30ml (2 tbsp) olive oil
1 g (1 tsp) rosemary
1 g (1 tsp) thyme
4 cloves garlic
50ml (3 tbsp) olive oil
4 slices cheese, cut into squares
Salt to taste
Pepper to taste
METHOD
- Preheat the oven to 180°C/360°F.
- Set a potato on a cutting board and place kitchen tools on both sides of the potato. With a sharp knife, make deep vertical cuts, but without cutting all the way through the potato.
- Place potatoes with the cut side up in the baking dish.
- In a small bowl, combine 2 tbsp of olive oil with some salt, drizzle over the potatoes and bake for 25 minutes.
- Place garlic cloves on the cutting board, add rosemary and thyme, and chop everything very well. Place this mixture into a small bowl, add 3 tbsp of olive oil, season with salt and pepper and mix well.
- Brush potatoes with this mixture, and insert cheese squares into potatoes’ cuts.
- Bake for another 20 minutes.
